Sombrero Salad

1 pound ground chuck
1 med tomato, thinly wedged (or cherry tomatoes sliced in half)
1/4 cup onions, chopped
2 oz. black olives (sliced & drained)
1/2 green pepper (chopped)
1/2 pound colby cheese (cubed)
One cup Western dressing
1 pkg. Taco seasoning mix
1/2 pound Rotini noodles

Prepare meat, add taco seasoning. Cook noodles separately and drain. Mix all ingredients together except tomatoes. Stir in dressing. (Adjust amount of dressing to your liking.) Add tomatoes just before serving.
Makes about 4 pounds salad.

Conclusion: Obtained this recipe from Arlene at Don's Sunnyside Foods in Sheboygan, Wisconsin. Served it at Sarah's bridal shower. Friend Sharon took the recipe and immediately substituted chicken for the ground chuck when she served it. Enjoy~~~~~
